Best Ever Oatmeal

This is my favorite breakfast all winter long, perfect for those chilly (and busy) mornings. Soaking the oats breaks down the phytic acid, making them easier to digest and so much creamier. Even if you normally have trouble with grains (as I did for a long time), soaked steel cut oats are sure to be a tummy tamer. And please, if you don’t do it for the health benefits, please do it for the taste! That creamy goodness...

Before you get started, you will soak 1 cup of steel cut oats (I like One Degree Organic Foods Gluten Free Steel Cut) in a mason jar with water. Simply put the oats into the jar, pour water over them to cover, close the lid, give it a good shake, and let it soak overnight (or at least 6 hours) on the counter - do not refrigerate.

Doing this ahead of time makes breakfast the next day a snap! You can soak the oats in the morning and cook them at night, or even the following morning. Alternatively, soak them at night and cook in the morning, whatever works with your schedule.

Recipe

This is a great base that you can add any toppings to, I've listed some suggestions below

Ingredients:

1 cup of soaked and drained steel cut oats

2 cups of water

Pinch of salt

3 tbsp. Ground flax

1 tbsp. vanilla

2 tbsp cinnamon

½ cup almond or coconut milk

Instructions:

  1. Boil the water and salt in a pot, and add the oats. Stir, reduce heat to low, and cook 10 minutes.

  2. Remove the lid, and turn off the heat. Add flax, vanilla, cinnamon, and milk, and stir to combine.

  3. To serve immediately, scoop out 1 cup of oats and top with sliced bananas, nut butter, coconut oil, pink salt, maple syrup/honey, or any topping of choice! To save for later, simply pour into a container and reheat in the microwave before adding toppings.

Some of my favorite combinations are below:

  • 1/2 banana + 1 1/2 tbsp. sunflower seed butter + 1 tsp. maple syrup

  • Handful of berries (blueberries, strawberries) + 1 tbsp. coconut oil + 1 tsp. honey

  • 1/2 peeled + chopped apple + 1 tap. maple syrup + 1/4 cup walnuts

I always add my fruit in before I reheat because I love stewed fruit, but if you prefer yours crunchy, wait until after.
